   Needed an oversize pan for Christmas eve dinner. Italians celebrate with the feast of 7 fishes. Family has 10 fish eaters. Menu included 10 lobster tails, 1-1/2lb gulf shrimp, jumbo scallops, mussels, little neck clams… I know that’s only 5. Sauced with lots of garlic, white wine and fresh herbs.
   Pan fit all the ingredients, cooked perfect with no hot spots, well balanced handle that stays cool, with a helper handle for the heft…it looks gorgeous and cleans up well. If you have need of a really big pan you should buy this Cuisinart pan. (Since that meal I cooked up a Moroccan chicken, and yesterday for the NFL playoffs a 4-1/2lb pork roast green chili dish, browning the pork on my Coleman stove and finished cooking in my grille) Big Pan for a big meal… Love it.

   I use this pan primarily for making omelettes. It is a lightweight thin pan, so it heats up very quickly. Consequently, you can only use low or low-medium heat to cook, otherwise the food will stick no matter how much oil or butter you add. Keeping that in mind, I have no problem making omelettes. I just add about half a teaspoon of butter, use a brush to spread the butter evenly and then once I feel slight warmth when I hover my palm over the pan, I add the egg white and yolk and let it cook on medium-low heat (take a look at the picture to get an idea of the gas flame). The omelette comes off the pan easily. Other than heating up quickly and no being able to cook fast at high heat, this is a great started stainless steel pan.

   A wonderful little frying pan. All stainless steel with an aluminium sandwich in the base makes for good heat transfer. If you cook on gas, as I do, keep the flames small and within the “double” base area.

   I guess you can tell from my spelling of “aluminium” that I am in the UK and could not find a similar product over here which is why I was so pleased to see this on cuisinartoutlets.com.com (US) Delivery was very quick about 5 days.

   People have said than plain stainless steel isn’t non-stick! It is if you condition the pan by heating a small quantity of oil until smoking just starts, allow to cool slowly and then discard the oil. Finally get the oil to the right temperature before breaking eggs into the pan and they will not stick. Much safer and longer lasting than coated pans where the coating peels off or becomes toxic if overheated.

    I recently purchased the Cuisinart 722-20 8-Inch Chef’s Classic Stainless Steel Open Skillet and received it with a minor dent on the lip of the pan (see attached photo). While the dent doesn’t affect the basic cooking functionality since it’s not on the cooking surface, it does impact my overall experience and satisfaction with the product. The skillet itself performs well – it has good heat distribution, a comfortable handle, and solid construction. The stainless steel surface is easy to clean and doesn’t react with acidic foods. It has a good weight and balance that make it feel like a quality kitchen tool. However, I’m deducting two stars because receiving damaged merchandise diminishes the value and enjoyment of a new purchase. For a respected brand like Cuisinart at this price point, I expect products to arrive in perfect condition. Even though the dent is relatively small, it’s visible every time I use or hang the pan, serving as a constant reminder of poor quality control. If you’re considering this skillet, be aware that packaging or inspection issues may be present. The performance is good, but the overall experience may be compromised.

    exactly what i needed to barely fit 5 1/3 lb costco kirkland frozen hamburger patties. if you have an induction stovetop the bottom part of the pan that makes contact with the glass is 12 inches in diameter.

    For this price point especially.

    I watched YouTube videos about how to make a stainless steel pan non-stick
    ( 1. put oil in the cold pan and disperse evenly on the inside with a piece of paper towel so there is a thin layer of oil on the inside of the pan.
    2. turn the heat on and wait till the pan is really hot. Then and only then add the oil you want to use for cooking. Now the pan is non-stick.

    After use never use soap and never use a scratchy sponge, just wipe it with a clean piece of paper towel or a bit of fresh water. It works.)

    The handle stays cold even on an open gas flame, it is durable and has a nice weight to it.
    Great quality for the price and looks timeless and elegant.
