   This worked really well for us right out of the box. The flour loaves have been nicely formed and perfectly baked. We baked a gluten-free loaf which wasn’t so well formed, but gluten-free baking is quite a challenge and we can’t blame the machine. We haven’t used the timer function. We used it twice to make sure it worked all right before giving it to our daughter for her birthday. She and her family have used it numerous times since, and are very happy with it.

   The machine itself is great, I am able to reliably make excellent bread. I took off a star because the recipes that come in the book are complete trash. Go find recipes designed for bread makers either online or recipe books – I’ve seen other reviews that agree with this, but figured I’d try it myself and yeah, it was terrible. Also, invest in a kitchen scale to weigh your flour, that helped a lot with getting my batches consistent. I do like that I can take out the paddle if I listen for the beeps. I didn’t mind the bread shape leaving it in, but have found that since it’s removable, the paddle can get stuck in the loaf and you have to carve it out which is kind of a pain. Also I didn’t trust the ultra-fast mode initially but after trying it, I really like it now. Much faster than normal cooking length and the bread texture is actually better. I have only made wheat bread so far but I’m happy with it now that I’ve figured out a good recipe.

   I’m a first time bread maker. I followed the instructions for French bread, and my first loaf was a disaster that I had to rescue not because of the machine because of my lack of knowledge about bread making and the importance of the balance of water to flour. For this review, I should have a picture of what it looked like. It was kind of wet and gooey and intuitively. I knew that’s not the way it should look. The manual said to remove the paddle by removing the dough when the machine beeps 10 times so that’s when I looked at my dough and saw that it was probably not the way it should be. I went ahead and tried to remove it anyway and ended up with gooey paste everywhere but there was still enough left in the machine to let it cook, and it was edible. I like rustic. My second attempt I had done some research and made sure to check the dough and sure enough it was wet again, even though I bought a scale and weighed the ingredients which I thought was the problem, but it was wet again so I added enough flour to bring it up to where it wouldn’t stick to my finger. Unfortunately, this was during the rise phase, but I figured it was better to just go ahead and add the flour. The loaf came out much better, but had large holes because the dough was still a little wet. I also made cornbread using the cake function and a recipe for a bread machine cookbook. It turned out very nice and very tasty. The main thing about this bread machine is that I can throw the ingredients in turn it on and have bread in a few hours not much to clean up Making the cornbread was easier again throw the ingredients in the machine does the work mixes the ingredients and bakes it the machine is compact and easy to pull off the shelf when I want to use it Easy to clean I started off with a 1 pound loaf of French bread and I’m eating it so fast. I’ll probably need to make a 2 pound loaf. But it was great I realized I’m out of bread. I gotta make some so I threw the ingredients into the Cuisinart and had bread for dinner. The picture shows my pastrami sandwich and cornbread with some salad.

   I’ve had this bread maker for four months now and feel I can give an honest review. To start, I do not make bread in this bread maker. I use it only for making my dough. After the dough has been kneaded and allowed its first rise I remove the dough to a pan for its second rise and bake in the oven. For what I do with this machine it has been very good. For allowing a full cycle to allow a finished loaf I cannot comment. Although, given the size of the pan and the vertical baking I don’t think I would like the final product. If you are looking for something to knead the dough and provide only the first rise then this is a very good machine.

   I had an older Bread Machine and used it for at least 10 years. Well it finally gave out. I have limited counter space so I purchased this Compact Cuisinart. I made many breads in the unit and have been totally satisfied. I use the dough cycle a fair amount of time and have had great results. I prefer a traditional style loaf of bread. In the photos below all the loafs were made with the dough cycle. There not perfect looking but not bad for me.
